I know this subject has probably been covered before but everyone is unique to what they want so I'd like to ask this myself.
I'm looking to get max handling out of my c5. What's a good setup? I lowered it and got some nittos, that improved it a little but I want to feel like I'm driving on rails .
Are coil overs alot better than just going to c6z suspension?
Any input would be greatly appreciated!!

You will have to be a bit more clear in your goals that just stating that you want "max handling & driving on rails".
Educate yourself as much as possible before you start dealing with vendors, start with this.
Spend some time in the autocross and road racing section. Search for post by SOLOFAST, he is one of the more knowledgeable individuals on there. There are also many books on how to adjust and modify your suspension to achieve better handling without spending a fortune on aftermarket parts.
