You can definitely go bigger than the 02-04 LS6 cam. For your best options it might be best to talk to Tech at Comp Cams. You may get good advice here from someone who has done the same.
I just installed a GT-11 from LPE in my '02 Z06 (stock original 243 heads). I haven't gotten it tuned yet, but it runs fairly well even without a tune. I'm keeping it below 3K until I get it sorted, but it feels much healthier right off idle than the original cam did. I would imagine this would work well with a stock converter. It is a high lift/short duration cam and many feel that similar results can be had with less lift and a little more duration, but IMO that will sacrifice emissions as well as idle quality.
My valvetrain is pretty noisy with the stock length pushrods installed (suggested by Lingenfelter's Tech), I've ordered longer pushrods after measuring lifter preload to be on the low side. This will hopefully quiet things down a little. Springs also need to be upgraded for lift. Link:
