I have the option to buy a set of used kooks w/ cats from a guy local for $700 or I can buy a set of brand new xspower headers for $725 w/o cats.
I don't plan on running cats as the car is already running and tuned without them. So if I get the kooks I have to cut the cats off and buy all new gaskets. What would you do?

If its really that big of a deal for you that you dont want to run cats then I would say go with xs power or wait for another set to come along that is catless. Seems to me like it would be kinda a pain to get everything lined up like its supposed to be if you cut the cats out.
The XS Power fit the car OK, but I've the flanges/pipe wall thickness is VERY thin, they just don't seem to seal well once they come off the car for a clutch/trans/diff swap
Gaskets? if you have a 97-00 car with the round port ex. gaskets, reuse them(GM MLS is the best gasket), if you want new get the LS2 2005-2007 gasket, they are about $20/pair
Stick with the big name American products that will be here for the long haul
