I did some searching, but I didn't come up with much of anything related to this problem.
Two weeks ago I wasn't able to turn on the digital climate control in my '98 Corvette. After a couple of minutes of repeatedly pushing buttons, it finally turned on. At that point I quickly discovered that I then couldn't turn it off. About five to ten minutes later the issue resolved itself and everything again worked like it should ...
... until yesterday, that is. While on a run with a local Corvette club I discovered that now the temperature cannot be adjusted more than one degree. No matter what I do the setting is stuck at either 67 or 68. Aside from that, everything still works correctly. It seemed to blow warm air in the morning when it was colder outside and then cold air later in the day when it was much warmer outside.
Sounds like you need to have your climate control repaired/replaced. You will need to remove it from the dash. Sorry, no simple or cheap solutions for that one.
It sounds like a problem I had a few years ago. I could not adjust the temperature by more than 2 or 3 degrees and i also could not turn the unit off. I sent it to a place on fleabay that repairs speedometers and these typed of units. They said they cold not fix it. I ended up buying a remanufactured unit from a place that i believe was located in Connecticut. The remanufactured unit has worked fine.
Taking the unit out of the dash wouldn't be a concern for me, but the cost of replacing it would be. I drove the car today. The temperature is still stuck at either 67 or 68, and this time the off button wouldn't work again. All other functions worked as they should.
Could possibly be a cold solder joint... I'd lean that way because it does come back on and go off. I would suggest disassembling the unit and reflow all the solder on the pass through pins, make sure stuff is tight in there, you know?
Looks like you live in the warmer part of the country and during the summer I bet the heat could soften that solder. Just an idea but would cost you nothing to try...

I thought that I should follow up on this thread just for the heck of it.
For eleven of the last thirteen months the digital climate control wasn't working like it should, but I never had the desire or money to pull apart the dash and replace it. Within the last two months, however, everything has been working correctly again. It completely defies logic, yet I'm not at all surprised given the quirky behaviors my Corvette often exhibits.

Looks like the Corvette Gods decided they have tormented you enough.
I can relate to your comments about the Corvette's quirky behavior. Mine is always throwing me one curve ball or another. Sure keeps my life interesting!!
You can exchange yours for a rebuilt unit for $160. The c5 displays also tend to have the disply go dim after a few years due to poor resistor connections on the power board... They will fix all that too...
