I have been driving with the oil pressure gauge showing the highest pressure while getting ready to change the location and the oil sending unit. For the last two days the oil gauge shows low and eventually
Goes to normal. Today it showed low pressure and went to showing the highest pressure again. Should I just go ahead and change the sender and location or should I check for other issues?

Are you asking for permission to change the part without troubleshooting first?
I think I'd change the oil pressure sender since you already know it's bad. Then you can troubleshoot if you have other problems. I do know of another C5 that was dropping low and then back to normal and the sensor fixed that one. I suspect that it will fix both your problems. You'll know shortly after you change it and start the car.
