Cooling problem with solution
I drove it the next Monday and it didn't give me any issues. Tuesday, I got the same message on the way home, just before I pulled into the driveway. I looked under the hood but didn't see anything significant and I let it cool off and checked the reservoir. It was a the proper levels.
The next day, it gave me the message just before I got to work, 20 miles away. I drove it home and got the message a couple of times, right away.
The weird thing is, that every time it overheated, it cooled off again right away, as long as I was moving. On Wednesday, though, it got to the point where it was saying, Reduced power and the temperature was about 270F. I pulled over, shut the car off and let it cool. Started it back up and was able to drive home and it did heat up to 250F again but then cooled off right away.
Thursday, I didn't drive it but last Friday morning, I drove it to the mechanic, Scotty's Corvette here in Albuquerque. It gave the message about the coolant being too hot once at a stop light but it cooled off again right away. It gave me the message once more as I pulled into Scotty's and by then I shut it off.
When we lifted the hood at that point, we could see that the reservoir was leaking coolant into the compartment. Apparently it had a pinhole in it that was small enough that it wasn't hitting the ground under the car when it was parked so I wasn't able to tell what the problem was. However, it was enough to keep the system from pressurizing properly so it would intermittently overheat and then cool off again. The thermostat was probably totally confused!
Anyhoo, Bruce replaced the coolant tank and did an oil change. He also replaced the swaybar bushings so now it doesn't squeak any more!

Posting this just as an FYI for others who may have similar symptoms.
