Just picked a bone stock 01' vert with only 28k miles.
Love the sound but need just a little more of it. Can I
add anything short of a cat-back exhaust to get that little
extra?
An x-pipe will probably make your stock exhaust a little quieter but smoother sounding and that is all. An inexpensive way to add a little sound is to do what is called "the bypass mod".

Z06 ti mufflers , I love them, maybe a few DB deeper sounding, louder , and avail here affordable and come with much bigger stainless Exit tips. you probably have a crossover pipe in there already my 01 does ,stock I believe...
X-pipe will only change the exhaust sound, for the better IMO. My only reason for installing one was to eliminate the annoying jingle common to Z06s with the stock H pipe.
X-pipe and Z06 Ti's will sound good esp. in a convertable. it will give it a smooth deep sound without being obnauxious. with the Vert you will hear alot more of the sound then a coupe. Magnaflow and a few others make a "X-Pipe" that will fit the stock H pipe. you wont notice much of anything on a Non Z06 ehaust with a X and the Ti's have a better looking tip and are MUCH lighter then stock Vette mufflers.
I have C6 Z06 LS7 exhaust manifolds, 3" downpipes and 3" Hpipe to stock Ti's and it is deeper then my stock system and ever so slightly louder.. So keep in mind if you do a catback keep in mind how it will be effected with future mods. the Stock C5 mufflers are so quiet you most likely wont hear any difference with the X.

I put an x-pipe on my car when it was stock with just a Borla Stinger axle-back and it really smoothed things out, made it sound better (personal opinion of course). I now have long tubes, catless x-pipe, and z06 Titanium mufflers and it's barely louder than a stock car but still smooth, sleeper mode the best way to go about your tips is probably just buy a new axleback eventually, you'll get the louder sound you're looking for too.
