Removed stock cats and swapped H pipe for an X yesterday... Outcome is a nice increase in loudness but not too loud...deep and throaty. I feel like a lost some low end torque which i expected, but mid to upper rpm's it pulls really strong... The smell is not pleasant but certainly not unbearable. My setup is JBA shorty headers, no cats, magnaflow x, and b&b route 66.. Overall i love the sound its just about perfect for me!
To chime in with the other guys as well... others have reported the smell you refer to when they delete the cats. I've seen that posted quite a few times. Not sure if it'll go away over time or whether it'll always be there.

Should always be there but it doesnt bother me. It's not a DD
It may be the tune, but it certainly isn't due to less back pressure.
Yeah I never really completely believed the whole back pressure thing... Had it dyno tuned recently and the tuner said it would not affect the tune if I deleted the cats. Also not throwing any codes... But I don't know much about tuning.
