I have a 2001 LS1 with 63000 miles and not getting the 26-27 highway mpg while cruising at 70 I used to get. Today it seems to average just over 24 mpg. It has a K&N cold air intake. Any ideas on what to looks at?

I would look at the usual maintenance/upkeep items;
tire pressure
spark plugs
plug wires
air filter cleanliness
3 mpg isn't a significant amount so I wouldn't be too concerned with something major going on.

Cars develop carbon build if you are not using the right oil and the right Oil life cycle for your driving. Over time this could effect how your car engages the fuel management system. Poor gas is a big culprit, plugs are usually not the problem unless they relate to a miss from a wide gap over time or a failed coil. You would notice these.. make sure you are using the best gas you can get and + - 2 mpg is nothing significant to be concerned about.
Summer can put a big demand on fuel economy.
