Help ! temp gauge erratic sometimes

Help ! temp gauge erratic sometimes
Need help ,
Few weeks ago at track day my temp gauge was erratic up and own getting 'temp over heat " all over car was cutting in and out .
Pulled off temp sens connection re set it checked wires for cuts .
All good for 3 hrs .
Replaced temp sensor connector and 6" of wire and temp sensor allwas good drove 5 hrs up to Watkins Glenn for two days on the track first day no issues then second day after first run temp gauge freakin out once more , pulled connector had someone in car look at gauge while wiggling temp sensor wire pulled off ECU connectors and re-set them all was good for last session on track and 5 hr ride home.
This has been erratic for weeks thought replacing temp sensor and connector would solve the issue but it did not .
Just wondering what I am missing could this be a ECU issue ?
I am stumped and it's really getting to be PIA never know when it's going top freak out .
Any ideas would be helpful .
