That sounds like a bad battery terminal . Clean your post and try again. That one click you get is the starter putting a heavy load on the battery, then it doesn't handle the load.
Alright, just tried a different battery. Battery didn't seem weak, lights were bright, horn was loud, did the exact same thing. Tomorrow I'll use a battery tester (surely two batteries can't be bad)
Ok I guess I'll pull the starter...what is the best way to get under car? Jack stands? I don't have a lift

Mine did this on and off until I changed the starter. Mine has headers too, and it was a PIA. Raise car up as far as possible so you can have more room to extend arms. I put a thermal wrap on mine too.

If you don't put in a stock Valeo starter plan on getting a Charge System Fault message. It does not mean it will not be charging but you'll get the message.
It can be tuned out of the PCM and will not affect normal charging.

Ok...just got out from underneath the car and there is no room, looks like I may have to remove exhaust. Can I get by just taking it off from back exhaust gaskets or will I have to remove the header and all?
I just had to detach exhaust from header, and remove header bolts, so you can wiggle them around from underneath. I hope I never have to do it again, I thought I wouldn't be able to get it out, tried the next day and it came out. Then I thought I would never get the wires off, much less reconnected, but I did. I was cussing out the GM engineers the whole time for not putting another 6" or so of wire on it, so it would drop down below the bottom of the car and be easily changed.
