Default clutch questions

I'm getting ready to do a clutch change and I have a few questions.
First some info on the car 99 FRC not much driving on street mostly used for autox and hillclimbs stock engine may do H/c/I/ some time in the future.

I'm going with the ls7 clutch kit with a light weight flywheel either from Cultrag Performances or Scoggin Dickey Parts Center. One uses a ram aluminum flywheel the other a Fidanza aluminum flywheel.
1) I know lots of people have used the Fidanza but has any one used the Ram?
2) Do either have the extra holes for the weights like the factory ones do?
3) The pilot bearing (14061685)on both sites say for 2000 up mines a 99 is this still the right one?
4)I'm rebuilding the torque tube as well were do i get the BMW couplers and do they make a 10mm one?

I can tell how interested people are in this post so I'll update it
I did not go LS7 I went monster level 2
I went with Tick performance for every part for the clutch as well a the torque tube rebuild.
14061685 is the right pilot bearing for a 99.
