How much performance does a corvette, or any sports car for that matter, lose over repeated launches, redlines, races, and normal corvettish driving over time? Will my 20k mile C5 begin to slow down when I reach 100kish miles?

What makes you ask that? Most loosen up with more power over time. If you take care of it, it will stay pretty close to the peak power it had.
Actually, the first 12,000 to 20,000 you are gaining performance as the engine parts lapp into perfect fit. From 20,000 to 50,000 is the peak performance range, with very slow degredation from 50,000 to 100,000. At 100,000 a typically driven/run engine will be within a couple of percent of a brand new engine.
This car had 77K on it when I started modding it, trans was a little disappointing when I had the pan off while swapping the converter but I have beating on it pretty well now and things are holding up. It made 320rwhp with headers/cats/LS6 intake/vortex (A4) running pretty rich - 940-950 O2s, there was a 97 with 22K miles on it (M6) at the dyno that made 290 with a vortex and some kind of aftermarket exhaust so I dont feel too bad with 77K :)
Cam/valve springs/new timing chain go in next week...
