Coming back from Phoenix today the low coolant light came on and I pulled into Pep Boys to get some anti-freeze and top it off but the resivoir was full.
Could the sensor just be bad? Thats the electrical plug on the bottom of the resivoir towards the back of it... right?

Any ideas?
I had the same thing happen on my C5 when I was stopped on a steep grade. After checking the coolant all was fine - then it happened again??? For some reason I checked the windshield washer fluid and it was very low. Topped it up and the light never came on again?. Now I don't know if this was just a coincidence or if the two warning systems are connected. Maybe take a look on yours just to see. Good luck.
