I i put coilovers on that gets rid of the front and rear leaf springs, i assum ethat my handling will be much better all around, but how will my launching from a stop be affected? wheel hop? or anything or will my 60' times be the same?

If by "much better" you mean "just barely noticible" in terms of sideways Gs and acceleration and braking, then, yes. Numerically, on a dead-flat skid pan, it would be almost impossible to detect the difference.
However, coil overs affect the handling more in the quality of the damping and springing rather than the quantity of damping and springing.
The big advantage with coil overs has more to do with road racing than with drag racing. Coil overs can be easily corner weighted. So that with the driver in his seat (in a driving position) 1/2 a tank of gas, tires at correct pressures, both front tires carry the same weight, and both rear tires carry the same weight. This allows the car to have the same behavior in right hand and left hand turns.

With the right shock, you could get a big improvement. Thats why they make the 90/10 drag shock. For street use any adjustable would be an improvement over stock. Pro racers spend as much for shocks as most of us might spend on engine mods.I can't imagine going to coil-over and not researching before hand, what it was going to do....
