When your changing a cam on a c5 do you have to completely remove the condenser or are you able to roll it up and out of the way?

No, you don't have to remove the condenser. You should be able to move it just enough to get the old cam out and the new cam in.
Check out LS1HOWTO.com. They have to whole install written up with pictures. The do head removal and installation but only because they are swapping heads and lifters. If only a cam install, no need to do that.
I had to have another person hold the condenser while I pulled the cam, you don't need to remove it, but you probably will need a extra set of hands
I used the LS 1 how to directions , just changed cam , gears , chain , oil pump & added chain tensioner , drilled & pinned the crank & balancer (25% underdrive) I cut some 8"-10" wedges out of 2x4's to push the condenser up just enough to give me a little extra room to work , cam cleared easy. I did the entire job by myself (no "x-tra" hands , nowhere !) I'm almost 70 .
