Oils oxidize and get contaminated. The more they are changed the better protection they offer.

I like to use premium synthetics and in my other cars I change trans fluid (complete flush), differential, coolant, PS fluid, and brake fluid every 2 yrs. If I lived in a HOT climate or towed I'd probably change them once a yr.
In my toy cars... I change them more often than that.
As for engine oil... I don't go by mileage. I go by color & smell. The DD would equate to approx 5k miles. But in the vette I tend to change it about 3 times a yr. So approx every 2k miles. Just depends on how I've used it. (long road trips -vs- several outings at a dragstrip). LOL.. in the vette the oil is never black or even dark brown.

2004 CE Convertible Daily Driver 114k miles. When DIC says change the oil. change it or DIC says washer fluid low add washer fluid when gas gauge gets low add fuel. Leave everything else alone

Mine is a daily driver. For oil, I follow the dic, usually every 4-5k I change it.

I changed the coolant when I replaced the radiator 6 months ago. I don't plan to change it again for a while. I think the owner's manual says every 100k or 50k with severe duty, can't remember.

I replaced the differential and transmission fluid about 4 years ago. I think the fluid I drained was the original factory fill. The 6 speed was noticably easier to shift with new fluid. Owner's manual claims it's good for life, but glad I changed it. Might do it again next year.

I changed the brake fluid and bled it after replacing the original pads and rotors at around 55k miles. I'll probably need another brake job in a year or two, and will replace the fluid then.

Only thing I haven't completely done is the clutch fluid. I did the "ranger" method once every week for a few months after I bought it. But the fluid stayed black. Never had a problem w/ the clutch, so probably won't mess with it until that's due for replacement. Car has about 100k now on the original clutch.

Change all fluids, once a yr. ( oil more often if you use your C5 often). Cheap insurance. I do this on all my cars.

Need usage information. Track use vs street use vs sitting in your garage most of the time. Given that you have no useful info to share with us I may be more verbose than needed.

Oil once a year at minimum. I tend to do it before a track day or after 3-5k miles if no track time.

Coolant every five years or so, the dexcool stuff is pretty good these days. May need more often if tracking. Technically it's specced for something like 100k miles but I'd do it at a quarter of that.

Trans and diff fluid every five years or so for street use, maybe every 25-50k depending on how you feel. Much, much more often if tracking. If you feel like shifts are more annoying than they used to be, drain and fill new fluid.

Brake fluid depends on use and type. DOT3 gently driven can be as much as 5 years. Some 600F or 660F rated DOT4 (unofficially: DOT4+, DOT5.1) flushed every year with a couple-pump bleed before every track day, some people even do a bleed during lunch on track.

Clutch fluid pretty much never unless you have a problem with it, or unless you have a speed bleeder. "Ranger method" may or may not be effective. Bleeder is easy, get 'er done every couple years; without a speed bleeder it takes a lot of labor to do a proper fluid replacement.

Run a bottle of techron concentrate through your gas tank, following instructions, every year or so. Do it a couple gas tanks before an oil change.

The oil life monitor in the C7 was modified to ensure that you change the oil at least once a year, regardless of mileage or driving style.

The other fluids I replace at 50k intervals or 5 years. I drag race my car.
