In the '01 I got recently, the passenger-side mirror 'auto-magically' readjusts itself every time I start the engine. I noticed that it did that when the memory seat adjustment function was enabled, so I disabled that function -- no joy. Does anyone have any idea how I can make the mirror stay where I leave it?

I had the same problem with my 04. Now I just open the door with the key. Just another electrical snafu on the C5 by the designers.
Have you tried adjusting the seat AND the mirrors PRIOR to pressing and HOLDING the memory seat button to set the memory? It could be the mirror is going to a previous memory setting.
Yes, I did that multiple times, but the mirror seems to have a mind of its own. It messed up when the memory function was enabled, and it still messes up now that I've disabled it. Weird, isn't it? I know it's not a big deal, but it's annoying.
Well, rrwirs, I had to see it with my own eyes, but you were absolutely right. I just went out and opened the car with the key, and the mirror stayed put. Relocked it, opened it with the fob, and the mirror took a dive -- truly bizarre.

Oh Geezzz! No wonder I cannot figure out 75% of that stuff on mine even after reading the manual a few times!!!!!!!!!!!!!!!!
Maybe try setting both memories to where you want the mirror and see if that helps the key fob adjustment issue. The fobs are numbered "1" and " 2" corresponding to each memory button setting. Fob 1 sets to memory 1, fob 2 to memory 2.
how are you setting the memory car running or off and how long are you holding the button down for i had a problem with mine when i first got it start the car select the number you want to set it to set the mirrors, both of them and press and hold the memory button till it flashes that's it if you do any adjustment at all without pushing the button again till it flashes it will go back to the original setting you set it at
(take note that the seat position, steering wheel position, ac settings and the radio settings will be memorized with your mirror setting so next time you start your car it will be what exactly how it was when you set the mirrors )

I set the memory -- both buttons 1 and 2 -- with the engine running, and I held the 1/2 buttons until the light flashed. Everything works as it's supposed to, as regards the ability to have all positions go to what they were set to for a particular button. Everything, that is, except the passenger-side mirror, which seems to have a mind of its own. If I open the car with the key fob, it immediately rotates downward to a position that is not even close to what I set with the memory buttons. I've decided to just stop using the fob (as suggested by rrwirsi, above), declare victory, and move on.
Remember the memory settings 1 and 2 correspond to the numbers on the back of the key fob. Memory setting 1 with key fob 1, memory setting 2 with key fob 2. When I bought my 2004 I programmed memory setting 1 to my preferences but was unaware that I had key fob 2. I was getting pissed because the seats, mirrors and everything else would go to memory setting 2 every time when I used my fob to unlock the car. I thought something wasn’t working right. Finally on the second day I decided to look at the back of the fob I was using. It was fob #2. Nobody else drives the Corvette other than me so I programmed both fobs and memory settings to the same settings.

I really wish people would stop suggesting you can fix this by resetting the memorized positions. Nobody that has ever driven my car since it rolled off the line in Bowling Green 17 years ago has pointed the mirrors at the ground and committed that position to the BCM's memory. Yet that's what my mirrors were doing. The problem is the position sensors in the mirror get corroded and start sending wonky signals to the BCM. (And the reason it doesn't happen when you just use the key is because it's the FOB signal that commands the seats and mirrors to move to preset positions.

Yep. Mine wanders too. Never had any fix except to unlock the car manually with the key, rather than remotely with the fob.
I think a real fix might be removing the memory function at this point. Some claim replacing the control unit in the seat does the job? I'm not sure if that's accurate.
Replacing the control module in the door does not fix the wandering mirror problem. I know first hand. I had not only a wandering driver's door mirror, but also an intermittently non-functioning electric door lock on the driver's door side. My auto electrical technician determined that the door lock switch and solenoid were functioning, so I ordered a replacement door control module. That fixed the electric door lock anomaly but not the wandering mirror. So I had him install a Wandering Mirror Cutoff Switch as first described by Corvette Forum Senior Member "ninety6":
