I have a slight coolant leak coming from the coolant header tank return pipe, I thought maybe the clip was weak so used a fuel pipe clamp to check but it hasn't fixed it so either I have a split pipe or the fitting on the header tank is cracked. My question is, Can I just remove the rubber pipe to check without it leaking coolant everywhere? As its a return pipe and above the coolant level I'm hoping if I undo it I'm not going to have any issues, but wanted to double check!

You MAY get a little drippage, but certainly it won't be like Niagara Falls. The usual culprit is the "nipple" from the tank. They're known for cracking.....
Use old rags to stuff underneath the suspected leaking area before removing the clamps and hose. Do it when engine temp is cool, of course. I'd also remove caps from radiator and reservoir prior so there's no pressure anywhere.
