I want to put headers and delete the cats. What do I do with the second set of O2 sensors?

Leave them off the car. You will need to have the tune adjusted to turn them off or else you'll get a check engine light because the PCM is using them to measure cat function.

And of coarse your doing this for an off road only racing application.....

Will I be able to do this with the diablo I3 8245 platinum tuner?

Might have to research what the Diablo will and won't do, I just put full exhaust on my car and my tuner said for me to remove the rear o2 sensors and he will turn them off and for me to put the front sensors into the x pipe about a foot after the collector to keep the computer from getting a rich/lean rich/lean reading, supposed to help get a better tune, IDK. The header bungs are plugged, you would probably get better results doing a dyno tune, the hand held tuners have their limitations from what I hear.
