Your C5, if stock, doesn't have an oil cooler. Time to upgrade.
250 is fine, if you have good oil in it FYI. The over temp alarm comes on at 280.
Improved Racing makes a great cooler for the C5, or you can get a DeWitts radiator with an oil cooler built in. Both good options. My car has the DeWitts EOC radiator and I see 250-255 on full 30 minute track sessions here in Florida.
250-255 degrees isnt all that bad. Good oil doesnt start breaking down until around the 300 degree mark. Impurities in the oil like water vapors etc dont start burning out like they are supposed to until the operating temps of 225 or so.

Have you really cleaned the radiator and the AC condenser? Chit gets up there easy and that requires a good blow job from the engine side. You are not alone hitting those temps and a lot of those solve there problem just by cleaning the radiator and condenser. Others have the car's fans come on earlier as the factory settings are high. I've done this to my supercharged 99 and she runs a cool 190-200, even when doing 150 mph (disclaimer to all cops, i was doing the speed limit)

It might be 260 - been awhile since the 'rona since I've been able to put my car to use.
There isn't a warning indicator for engine oil temp. My track car sees 293F regularly on track days.
However, there IS an over temp warning for the transmission oil. That one comes on at 280F.
If you're talking coolant temp, the warning for that comes on at 260F. I tested that one as well last year in my supercharged C5Z. Sheared the PS/Alternator bracket on a 1/2 mile event and I lost the water pump.

Surprised there isn't a temp warning for the oil. I was always told 280 so I figured I'd just never hit it because of my oil cooler. I stand corrected, if so.
How are you seeing oil temps? There is no onboard oil temp gauge, only coolant. Or do you have a separate oil temp gauge?
If coolant....clean out the radiator and condenser. Also make sure you have the front air damn installed on the car to direct air up into the radiator opening. C5's suck up a lot of crap into the radiator opening.
