I have a 2001 coupe I recently had the water pump replaced and the coolant system flushed. I am now noticing that the temperature gage will climb up to 220 -230 at idle. Should I have had a new thermostat put in when the water pump was replaced? Prior to the water pump issue the temperature gage would read 200 - 210 degrees at idle.

Well on these engines the thermostat housing bolts onto the water pump itself, the original design had it as one integrated unit. I don't know any competent mechanic that would replace the pump and not the neck or thermostat or at least inform the customer that it's a mighty good idea.
Stock thermostat opens at 187° and fans are set to start at well over 200° and the high speed fan at something like 235°. I'd replace it if it was me and I did when I had my water pump replaced.
