Its been a couple weeks since I drove the 03 Z06. I took it out for a drive and before I got 10 miles, it was running hot. I pulled into a friends mechanic shop and let it cool down. The mechanic says the reservoir cap seal is bad....I drove it home and no heating issues...temps were right about 210-220f. I stopped and ordered a new cap and got new radiator fluid. Will change it out Saturday when the new cap comes in. They did have a cheaper aftermarket cap in stock, but I opted for the OEM
How hot is hot? Did anyone check the AC condenser for being plugged with sand/road debris?
First place I'd look is up in the 'bottom feeder' area, in front of the condenser. Make sure nothing is in front of it, like a plastic garbage/grocery bag. If that checks out, pull the plastic upper radiator mount. Then you can look down between the radiator and condenser. I made up a small air tool out of threaded pipe, that screws into my airgun. Put a 90° street elbow on the other end, which turns airflow 90°. Then I can blast the condensor from behind. You'll be amazed how many bugs your C5 has murdered thru the years!!!

sounds like you had something up in there like a plastic bag that dropped out when you stopped, either way I would check that before saying the cap was all of a sudden bad

If you didn't even get 10 miles, depending on ambient temps, it sounds like the thermostat could be shot, too. Just saying I don't think a bad cap would cause an overheat in 10 miles, or less......
Yeap check front radiator. Mine sucked up a bag and started over heating driving home 110 outside. Had to turn off AC and when I got home found a bag had cover 3/4 of the radiator
