I definitely would not switch the MAF.If you are planning future mods requiring tuning it's best to start with stock MAF tables (known base). The '01 up MAF is big enough to the point where many places don't offer a replacement MAF for '01 up Vettes. The ZO6 MAF doesn't have a screen so removing the screen on the '01 up LS1's might produce a small gain that might only be apparent with tuning.
