If you increase the height of your tire at the outside by 1 or 2 inches it could affect acceleration. If you are talking about increasing your rim size, you can still end up with the same size tire at the outside diameter that would have no impact on your final drive ratio. The stock rear tires 275/40/18's are 26.66 inches tall. You could find a 19 or 20 inch tire that is the same height and would not impact anything. For example a 325/30/19 would also measure 26.66 inches in diameter (I have no idea if anyone offers this size tire.)
If you are referring to increasing the outside diameter of your tire by 1 inch from 26.66 to 27.66 it would have some impact; it would probably be equivalent to keeping your tires and changing your rear end gears from 3.42 to maybe 3.30.
