If a hidden SPST switch is added in series to either of the ignition key reader wires there will be two choices: normal operation or the car won't start. Or instead of the SPST switch, if a three position center off SPDT switch is added with a resistor value the same as the key to the switch there will be three choices; 1. normal operation, 2. no start and 3. key resistor no read overide (this bypasses the key resistor reader either to troubleshoot the contacts or to get the car started if the reader fails).
As for trackers, on the cheap and super basic end of the spectrum, you can always throw an AirTag into a crevice somewhere. It has it's limitations, biggest one being that the tag needs to be near an iPhone for it to work.
