You don't want to. It shuts off to make it and the other FEAD components live longer. (when the compressor kicks on and high speed it shock loads everything in the belt drive system)
Vehicles with a WOT compressor cut out have them to maximize vehicle performance.
You may not have noticed thus, but the C5 shuts off at high engine RPM. This is to protect the compressor from overspeed. My recollection is the compressor is shut off around 7000 compressor RPM (I don’t remember the pulley ratio so not sure how close that is to red line and engine fuel shut off) and then it reengages at around 5500 compressor RPM. This was one of the main complaints the Corvette engineers had with the V7 compressor; extended compressor off periods at high engine speed conditions. The C6 received a newly designed variable displacement compressor with a higher 9000 max compressor RPM.
Note that he stock setting is to disable the AC at 100% throttle (WOT).
In your case, the only option that could apply is to increase the re-enable setting, so that you do not have to fully release the throttle to get the AC running again.
At most if the AC disables for a few moments at WOT it should recover quickly. I know what it feels like on long pulls, and you can tell the air is not being conditioned but it doesn't go from winter to Hades. It makes me wonder if you are driving everywhere at WOT, or your AC might need a little love.
I live in Florida where it's hotter than heck all year roumd and more humid than your dishwasher mid cycle. How do I undo this feature.
I'd leave it alone. Besides, if at WOT in a C5, you won't be WOT much longer than 20 seconds, or youll be going over 125mph, with THE MAN not far behind. You should be able to tolerate that momentary inconvienience.

If i remember there is others parameters. There is a high, low psi sensors that can override the RPM.
