I have a 2000 C5 (red of course) from new .. only about 25K miles on it, with less mileage in recent years as I have other cars .. I've changed the coolant once & bled brakes with new fluid a few times .. otherwise, just oil changes here and there .. in the early years oil changes were yearly, but lately I've let the oil sit for a few years .. Question: am I overlooking anything that should be accomplished with a low mileage C5? Thanks for any responses

Yes - if the coolant has only been changed once, you should change it again if it has been more than five years since the last time. I personally would change the oil since you state it has been a few years since you last changed it. Changing the brake fluid would also be a good idea. There is a maintenance schedule in the owner’s manual you can refer to for any additional maintenance recommendations.
Vetteman nailed it! I used to believe that coolant only lost some of its protection as it got old. That certainly happens. However, the PH changes from neutral 7.2, to acidic, which becomes more acidic with time. Basically, old coolant starts eating away at your coolant system, including the heater core, from the inside out. I'd change it immediately, and change it every 5 years thereafter, max....
Similar situation with my car - 2004 with 25,000 when I purchased 3 years ago. I changed or had changed all of the fluids, hoses and belts simply because of the age, not because they appeared to be needed. I just wanted to avoid any problems and know I am good to go for several more years.
