If I were to swap my stock LS1 intake with an LS6, how much would I expect to get charged for labor by a local shop?

thats not a bad at all. Considering you will save your back working bent over for a few hours if it's your first time to do it.

1 hour should be what the shop would charge. If they want any more than that they either dont know the task or they're greedy.

Chris, this is something you can do yourself. Use jmX's excellent tutorial on his website - it guides you through the process step by step with pictures and instructions.

It's not difficult and it's a very interesting project that'll teach you a lot about your car.

Check with http://www.slponline.com for part#30039. You will like the price and it comes complete ready for install. Click on the instructions icon and you will receive complete instructions with pictures for installation. It's about $100.00 cheaper than GM.
