Alignment techs never check the ride height, at least none I have seen. That is why alignment settings are within a range to allow for slight changes.
Replacing suspension parts usually does not affect the ride height much. If it does, the height should remain within factory tolerances.
I am sure GM has addressed this issue.
I always record the ride height measurements when I get a new vette. That way after lowering the car I know what the difference should be side to side.

It seems that most people take their measurements from the ground to the fender lip at each corner.
I measure from the top of the wheel to the fender lip.
Just be consistent; same location, tire pressure, fuel in the tank, etc.
Remember; this is only for comparison and is not the actual factory ride heights (trim heights).
