Stainless Works Long Tubes with their new 3" Stainless Xpipe and High Flow Cats would perfectly fill what you are looking for. Their headers and xpipe are made of 304 Stainless Steel. The headers are 1 3/4" diameter with 3" collectors that join up to the 3" xpipe and flow through 3" Random Tech Catalytics. This complete system comes with a lifetime warranty which, to the best of my knowledge, no other C5 header company offers.
This setup is pure bolt-on and requires no welding, just like the FLPs. The Xpipe runs from the headers back to the 2 bolt flanges from your muffler system.

My FLPs went on real well. IMO, a lift is a must as I can't imagine doing the headers on jack stands. As for the rear, this is a 3-4 hr. job with the right tools and stands; unless you are good with wrenches and have access to a lift, suggest you leave this to a shop that has done this.

Thanks to all for the info and sites. Looks pretty straight forward. Anything that can be unbolted and then bolted back on I can handle. (See sites below - 78 Vette restore and 34 Ford buildup). Just don't ask me to do bodywork. :D
