Do you still have the stock thermostat? If so you'll have a hard time keeping the car running under 192 as that is what the stock thermostat is.
I have a 160 thermostat and crusing around in cold or mild weather the temp runs 174-178. In hot weather or aggressive driving the fans are set to keep the temp around 180-185 or so.

Also Keep in mind one important thing... Don't set the fans to turn OFF any lower than the radiator can cool during normal driving....You must determine that point BEFORE you set your fan Temps.
What I mean is.. If you are cruising along and the motor is showing 182 degrees..(Even if you have a 178 stat this is possible) If you set your fans for anything less than that temp...They will NEVER shut off and it just becomes an unecessary drain on the electrical system.
In 95 degrees my static coolant temp during normal highway driving is 181..(much cooler in winter) My fans are set to turn off a degree or 2 higher than that.. hope this helps..

The factory setting may differ by year, but acccording to the local GM dealer, on a 99 Vette the low speed kicks in at 226 and turns off at 217, The high speed kicks in at 235 and turns off at 219. Mine runs a steady 193 on the road, and settles in around 210 in town. Outside of running the A/C, I have not had the fans kick in, but I haven't seen a real stop-and-go situation yet, as I have only had mine about 2 months. :chevy

I have a 01 coupe and the temps are exactly as Tigger has stated--these are the stock settings. I have been researching synthetic oil and from what I can understand, synthetics do their best work at 200 to 230 degrees. Anything colder and the oil does not lubricate as well. Must be the reason that GM set the stock thermostat and fan actuation temps where they did!! Running the engine at a cooler temp may be wearing it out at a faster rate. Before you change thermostats, you may want to check up on how well synthetic oil lubricates at lower temperatures. :D :D
