Purely opinion here, but I think on the LS motor the biggest power restriction isn't displacement, but airflow. That's why blown motors make about the same HP as bore/stroker motors, and both seem to max out around the same power levels.
If you go all-bore you can increase valve size and therefore airflow. If you go stroker you're limited to stock valve size which will limit your breathing capacity and susequently power output. If you go bore/stroke, capacity may exceed breathing capacity and you'll get limited return on investment.
I believe the C6 with the LS3 motor will have 3 valve heads which should raise the ceiling on performance capabilities.
