Default Torque converter question

I've been thinking about upgrading my stock TC for a higher-stall converter, such as a Y3000 or PT2800. However, 99% of the time, my car is used on the street (daily driver) and it will only run with street tyres.

My question is this: I have seen comments from vendors that a TC will improve acceleration from a roll (highway speeds) as well as out of the hole.
However, if I floor the throttle in 'D' and I'm doing 60mph, the tranny will downshift to 2nd and I'll be outside of the torque multiplication zone of most converters, right? Even if I'm doing 75mph, I can downshift manually to 2nd (~ 4,800rpm) and, again, I'll be outside the torque multiplication zone. So, how does a higher-stall converter help me on the highway?

Am I missing something guys? A converter is an expensive proposition, so I don't want to waste my money.

Don't forget that a higher stall converter will have more shift extension. I.e., your RPM will not fall so far (and hence you will be making more power than you would have been) on the subsequent upshift.
