First, what is the difference between the clutch in a 2001 coupe and the clutch in the ZO6 ? Second, I need to relace mine, who gives the best price. I think I want to stick to a factory set-up.
The Z06 has a higher clamping force and better slave cylinder than the earlier C-5s. The Zo6 Clutch is the way to go if you want to keep it stock.

I was quoted 5-6 hours labor. I don't know if that is reasonable or not. Yes you can use the Z06 clutch on the '99. If your going to do it, upgrade the master and slave cylinder as well. If you have a problem with your slave cylinder down the road, it will cost almost as much as replacing the clutch.
