DEpends on where you're driving (highway, traffic) and the outside temp. I've had my oil temp over 230 sitting in heavy traffic in 100 degree weather (that sucked) and it usually runs about 208 on the highway.
I'm going from memory here.
Now that I have a 162 t-stat, coolant runs 175 on the highway and oil runs 201. My fans were never adjusted, so I still run really hot in traffic.
After a few back to back autocross runs, the coolant is over 240 and the oil is about 230....

Mine normally ran 195 water and 210 oil on average. Installed 160 tstat and
reprogrammed fans. Now 175 water (no fans on), 190 oil normal driving.
