your doing all that stuff and tearing the topend down to do heads. Go ahead and spend the little bit more to get the cam in there and make it right. You could get an 2001+ stock C5 intake, and you will be fine for heads/cam.
The mods you mentioned will work fine, but, the real question is what your goals are with the car and how much money you are willing to spend.. Buying the same item twice or buying something just to end up removing it the following season gets old ( this has happened with both my Magnaflow X-Pipe and Donaldson Blackwing ).
I bought my C5 new in 98. I want to do something different with the car and I am thinking about adding hp. I want to do the following:
• Add headers (LG longtubes) (Great Idea!)
• Change gears to 3:42 (I would go a little bigger -> 3.73)
• Add LS6 Weiand intake (Good - but I think all you need is a stock 2001+ intake, which is the same as the LS6)
Would it be a mistake to add the LS6 intake and leave the LS1 heads and cam? (Yes - At least do a "cam only" upgrade while you wait for the heads to take advantage of your improved air flow. Just my .02)
My second round of modifications will be the AFR 205 heads. (Great choice, but what are your performance goals? There are much less expensive options for heads depending on what you're looking for, i.e., 5.3L Stage 2 Racing Heads for approx. $800 less)
Would it be a mistake to install the heads and leave the LS1 cam? (Yes - Do cam first then heads)
Any help would be appreciated. (Congrats on your "new" vette!)
Forget that Weind intake it will cost you power in the end, it's aluminum and will heat up with the engine and your air charge inside the manifold will be hotter than stock so spend the money on a factory LS6 manifold if you want an improvement
Thats a good question since the AFR 205 heads ($2,250) are new and just now becoming available - in fact I was considering them. The AFRs are an awesome head - no doubt about that, and would be great if you plan to eventually go FI.
However, I plan to stay naturally aspirated (NA) and realized a 30hp gain with my Patriot/TSP 5.3L Racing Heads ($1,550) alone! When you divide the cost of the heads by the horsepower they develop - I think you'll like the 5.3L option. It comes down to what your performance plans are and how much you want to spend.

I saw a post last week where a forum member can paint your intake to give it a polished look. It looked really good. Don't know if he powder coats it or uses something else. I think he even had a few LS6 intakes he had painted and was looking to sell, can't remember. This may be something you could look into. I don't remember who it was, I'm pretty new here and can't remember all of the names. Just look back over the last week of posts and you'll find it.
Stay away from the Weiand because it turns in to a huge heat sink and you will loose power with it. Go with a LS6 intake !
Als the Weiands also have bad sealing issues and leak !
