The cooler t-stat you installed just opens earlier, 170F instead of 195F, that is all it does. The car can still run just as hot as it did before. Most likely if you are moving with good airflow it will run cooler than it did stock.
The only other thing you can do to keep it running cooler is install a fan controller setup, such as the Vinci, or do an LS1 edit and program the fans to turn on sooner.
My car would run 200-230F in traffic and 195F (lowest) cruising. The trans would run 200-234F. AFTER 170F t-stat & fan controller install, the car runs 190F-200F in traffic and 185-190F cruising.
