Where is the oil temp sensor located?

It's on the top of the block behind the intake. You need to move the intake about 6" forward in order to gain enough access to replace it.

On the 02 Z06 it is just above the oil filter on the driver's side lower rear of the motor. I believe it is here on all LS1/LS6 motors. Easy to get to from the bottom. It is a little oval attachment held on by two small bolts with a wire going into it.
This is where most remote oil cooler line adapter blocks tap into.

I am not getting a reading from the sensor (low oil temp all the time) and I am assuming that I either left it disconnected, or knocked it loose while doing some work on the car. Now the question is whether I did it while installing the headers, or putting on the new intake?
I did a search, but didn't really find any relevent information, especially concerning it's location.

Might have melted it with the new headers as well. Find the line and trace it out to make sure it is away from anything hot. I wrapped heat shield around my electrical lines there for this reason. Hopefully it is just something simple like being unplugged.
