Default Engine temp

What should my temp go up too, I was in the drivethru the outside temp was 75, my engine temp went up to 228 then back down to 198. My vehicle runs at 190 when iam driving and sometimes when Iam stopped in traffic it goes up to 228-230, should I be concerned?

Not at all... those are the programed run temps, and your car is acting as it should under the conditions
you mentioned. infact normal temp can be up too 235F thats when the high speed fans will come on to cool the car back down..
here is the stock program for fan settings:

Depending on the model year...
For later model years:
The low speed cooling fan is commanded on when the coolant temperature reaches 108°C (226°F). It is turned off if the coolant temperature lowers to 104°C (219°F). The high speed cooling fan is commanded on when the coolant temperature reaches 113°C (235°F). It is turned off if the coolant temperature lowers to 108°C (226°F). When the A/C is on and the coolant temperature reaches 85°C (185°F), the low speed cooling fan will be turned on at vehicle speeds less than 56 kPh (35 mph).

For early model years:
Low speed fans come on at 219,high speed fans come on at 228,low speed with a/c on...

I had my fans reprogrammed to come on sooner and now my coolant temp never goes above 194 in traffic. It helps keep the oil temp lower too, it's usually around 200 in traffic.

At a steady 70-75mph, my coolant is around 189-190F, and oil is around 205-207F then.

I don't know the exact numbers he set it to, however I do know that whenever my car is stationary, both fans are running. Once the car gets up to about 30 or 40mph they shut off though, so it's not as if they are always running the entire time I'm driving.

Here is So Cal my 04 runs at 220 all of the time, even on the freeway, I did install a 160 stat but as you probably know that won't do a thing until I get the fans adjusted when I get it dyno tuned next month. What I did notice is that it is RPM related, when blazing through the back roads and canyons the temp follows the RPM's I'm pushing, the faster I drive the hotter it gets, when I back it down a little the temps come down. I think I'm just getting to know this car, and Man Do I Love This Car.
