Manual C5s are a bad candidate for this. Normally, i'd say it's ok, if you can wire in a neutral switch, but then, you're relying only on the parking brakes to keep the car in place... and C5s don't have the best parking brakes.

Compustar makes a alarm system that includes a remote start for M6 equipped cars. I have had one on my Vette for one year and have had zero problems. Like was posted before, you must make sure that your parking brake is properly adjusted or you will roll away. The system is wired in so that if the car is left in gear it will not turn over; you must follow a certain sequence before exiting the car while it is still running to ensure that you did not set the car up to start by accident( you will also get a long tune played on your remote to let you know that you properly set the car up to be remote started. In my opinion it is the best system out there and it is quite safe to use. Hope this helps out some!
Whilst this can be done, don't forget that you'd be relying solely on the handbrake to hold the car and the car not starting whilst in gear.
Hence, considering that you're not meant to ever rely solely on the handbrake to hold a parked vehicle -- for this or any car for that matter -- you'd need to understand that you'd be parking your vehicle in a manner that's considered unwise and unsafe, even without the added consideration of a remote start.
At the end of the day, you need to balance the benefits against the risks and make up your own mind. I know people that have done this and all have been fine. However, seriously, please don't come crying to the gallery should your car slip from what you thought was a relatively flat area and get damaged as that would be totally your fault.

Yesterday afternoon, I went to pick up my sons car at the dealership. Their double wide garage door was smashed in. I asked the service writer what happened. He said a customer had the remote starter in his pocket for his manual transmission, which he left in 1st gear. It was pretty funny! I don't know if its true, but he said they were against the law to modify them for manual transmissions.
I do remote starts all the time in manual V8 cars... mainly FBodies with no problems and its 99% safe to do... the car CANNOT move even if in gear regardless of the ebrake position. HOWEVER... that 1% is why I make the buyer sign a waver as well On the other side though, to protect myself I also dont disclose how I do it, I only offer the systems installed with DEI alarms (usually Valet or Hornet) as I dont trust any others! But done correctly its plenty safe... and there are always other accessories to install to make it even safer... but that all comes with money and what the customer is willing to pay!
At the very best this is incredibly dangerous. You must defeat all of the built-in saftey features that prohibit accident from happening....remember Audi !!!
