Bedding the Brake pads/rotors? How important is this and what works best? When we take the car in to a dealer for brakes, does he bed the brakes? Just wondering.
Very unlikely. That would be a sign of quality service. They're better at dropping cars off lifts, over and under torqueing fasteners and scratching the paint. There are a few good dealerships out there, but they're few and far between.

Try a search in the C5 autocross section. There is a lot of good info there. Basically it goes like this, get up to 40mph and press the brakes hard enough not to lock them and slow to 5mph. do this 3 times. get up to 60mph and do the same (3 times). Get up to 90mph and do it all again(3X). You want them to heat up to 1000 degrees. Drive for 1/2 hour to cool brakes and let sit 24 hours(not just over night) Go out again and do it once more.
I just did day 1 and checked the wheels. Man is there a lot of black dust on the rims. It's going to be 15 degrees tomorrow so I probably can't get them up to temp no matter how hard I brake. It'll have to wait for warmer weather.

most of them recommend the one you describe but some pads ask for a different break in.

the outside temperature won't change a lot of the rotor temperature.
two weeks ago I went on track by 30 degrees.
the video showed the front rotors orange which is way over 1000 degrees F
