Well, I've had my vette for exactly one day (bought a 2001 coupe) and I've found something to worry about. When sitting still, the coolant temerature will rise as high as 225- then the fans kick on and bring it back down to 215. When moving, the temperature is a constant 194. 225 seems a little high.... or is it? Can someone give me an idea of what is par for the course?

My 04 runs at 220 all the time, even on the freeway, been waiting to get it tuned so I can turn the fans down, I do know what you mean though, those high temps makes me nervous too.
Well, if I've read about it on the internet from more than one person it must be true!

Welcome! As said, those temps are normal. For the C5, the t-stat opens about about 185-190 which will start coolant flow and essentially set the low temp for your coolant (after warmup), and the fans come on at around 225-230 which will set the high temp in stop and go traffic. Anywhere in that range is probably "normal".

220 is normal for idling, but I'd say not normal on the freeway. I would check your radiator for blockage...it's quite common for plastic bags and leaves to get sucked up in there.

Welcome to the world of stock radiators.
If you wanna fix it correctly, get a REAL radiator. Be-Cool is the first that comes to mind.
Do not use a lower temp T-stat.
It's just a band-aid and the car will run too cold.
