What do you guys set your temp to in the winter when driving. I take my car out once a week and have noticed that I have to set the auto temp to 79 to keep it somewhat warm. My 300M is set at 72 or 73 to get the same effect. Anyone else notice this? I just think it seems a bit strange. Maybe it's because my car is a vert and the heat dissipates quickly.

I keep my coupe set at 73, but that's because I usually have a coat or jacket of some kind on. If my wife or daughter is in the car, I have to keep their side on 75.
I've also noticed this and mentioned it to my wife last night. In the Acura I had prior to the vette, I'd keep it set at a max of 70 even on the coldest nights. In the vette I have to set it at about 76-78 to get the same kind of warmth. Not sure why this is.....

Same settings etc. here. I'm not all that impressed with the ventilation system overall.

I imagine the Vette system is like my 2003 Saab 9-3 was... In the manual, it states that the temp you set isn't the temp it targets - it targets a temp that "feels" like the set temperature would if you were outside. In other words, a thermometer would show a difference from what you set, by design.
One example where the car would deliberately "adjust" the temp is the solar sensor in the dash - if one side of the car was in the sun, it would automatically make that side a little cooler to make up for the sun warming your skin.
How is that relevant? Well, maybe each climate control system designer thinks 73 "feels" different. Or maybe your other cars were similar to my Saab while the Corvette shoots for an actual temp.
They're just numbers. Set it to what's comfy and don't worry about how high or low it is
I agree with the comments. I just thought it was wierd and therefore figured I'd bring it up. Heck, I've seen some off the wall things brought up on this forum so I figured this couldn't hurt.
