Most people use comp mode.....allows a little wheelspin while minimizing the chance you'll get the rear end fully around.
As far as paddles vs. sport, I'll have to let someone else answer. I'm betting sport, which is automatic, right, for the fastest shifts. The autos usually beat the manuals b/c of consistency.
