I read the manual and it sounds like GM frowns on adding any after market products. I have had very positive results in the past with
Z Max additive, Water wetter, Sta-bil; just to name a few. I am approaching 2000 miles on the C6 and want to add some Z max.
Also put a Tornado intake insert in my everyday driver (Hyundai) and gained 2 miles to the gallon. Might work in the vette. Opinions?

It is likely that none of the additives you mention would do any harm. The question is, what are you trying to accomplish? For example, Sta-bil is intended for use during storage. Are you planning to store your car?
In general, the cost of additives over the cost of high quality motor oil is not recovered. Using the proper Mobil 1 or equivalent (or better, perhaps) is all you need. Also, there are some additives that are downright damaging, in spite of the advertising.
the tornado is a serious sham, I commend you on getting 2mpg more in your hyundai, but no way will that thing work in the vette.
I'm not familiar with Zmax, but water wetter is really only needed in an application where the water is self cooled, I.E. no radiator/air cooling. Even with water wetter, your temps are controlled by the thermostat and fans. I've used it in a water cooled computer, and for that application it works well, because it is self contained.
Are you storing the vette for a while? I would use sta-bil for prolonged storage, with maybe a gallon in the tank so it will burn out quickly after hibernation.
Every manufacturer frowns on aftermarket products because they have a chance of damaging their product if used incorrectly, and they don't make any money off it. I'm not a big fan of introducing additives to the internals of my car, but I will mod anything I can touch and fix if I break. My 2 cents

Never put anything in your oil accept Mobile 1 or equivalent.
Some Fuel additives will keep the injectors clean.
Water-Wetter usually gets a thumbs up, do a search there are volumes written on it.

The manual frowns on the addition of additives because in order to keep the warranty valid they would need to test the impact of individual additives. They can't just give a blanket statement since they have no idea what John Q. Public might do to their car. If you have good luck, so be it. Just do so under your own risk.
Regarding the Tornado, please tell me you are kidding. The idea of adding turbulence to intake air to net an improvement is beyond the laws of physics. I can't explain your claimed 2 mpg increase but I assure you it wasn't from the tornado.
Say what you want, I still run SEA FOAM from time to time and have been doing this in both of my vehicles and have had no issues. I would also recommend not buying into the TORNADO.
Some additives work as advertised. One example is the good fuel injector cleaner that uses Techron. Chevron sells it at parts stores, GM dealers sell a GM branded top engine cleaner with that same Techron ingredient. That stuff works if you've got a carboned up top end or partially clogged injectors.
But a 2000 mile Vette? If it's running perfect - it needs nothing.

Now if you can just figure out how to get the excess gas to go back into the pump at the gas station, maybe it would be like selling electricity back to the energy company???
