I recently took delivery of a 2008 Crystal Red Coupe, at NCM. Does anyone know the codes that appear on the build sheet? I'm asking about the codes such as "IP Harn 9498, ENG Harn 757, etc. No the codes such as QX3, F55.. What do the numbers mean? I'm sure GM has an explaination for the numerical/alphabet soup

The two that you mention are specific to the electrical harnesses for those areas. IP (insturment panel) and ENG (engine).
Don't try to figure out what the numbers mean...unless it's the last three/four digits of the applicable part numbers, they mean nothing to anyone but the people building the car.
As talon90 says, those numbers you gave mean that, for the options/features on your car, those are the proper harnesses to be installed for the instrument panel and the engine.
No doubt the build sheets are generated and printed by a computer based on the order placed for your car, so it's highly unlikely that any mistake was made up until that point. While it's rare, the human element has been known to very infrequently grab the wrong part for installation, but these days it is almost non-existent due to the checks/balances applied to modern production controls.
