I have had a problem the last couple days with my brakes squeaking at any speed over about 40 mph when I touch the brakes. I have a 05 z51 coupe, so is this normal? What can fix the squeak?

Don't get offended by my stupid question but are you sure it isn't the pad wear indicator?
Z51 brakes squeal if you don't use them occasionally. In 20K miles mine have squealed a couple of times after washing the car. I just go out and "touch up" the surface with one or two moderately hard stops and they are fine again.

Quiting for a while means you are getting a little pad material deposited on the rotors that is then being remove by normal usage. Do the full bedding procedure to develop a full coating and they won't squeal for a long time and keep using them regularly and they may never squeal again.
All performance brakes have this issue. They are just telling you that they are bored. Another possiblity is that there might be some dust in there. Usually a good rinse will take care of that problem.
Now if you hear a loud squeel then your brakes most likely need to be replaced now.
