Does anyone know what offset you would need to run the ZR1 rim and tire sizes on a standard C6 without a widebody kit? Is this even possible?
You COULD do it BUT you don't want to do that!
The front wheels will stick out just slightly and will work with stock size tires BUT the rear wheels will be about a 1/2" outside of the wheel well , it would look BAD, and you run a considerable risk of the tires damaging the rear quarter panels if you hit a big pot hole.
By the way, if you do a search there are several threads on here discussing this very thing with photos of cars that have done this. You can see how much they stick out and decide if that's what you want to do.
Now you can go with custom aftermarket wheels that are wider (say 9.5-10" fronts and 11-12" rear) and will fit a stock coupe with special offsets.

Neither OEM ZR1 nor Z06 wheels will fit your C6 without sticking out past the fenders and, as mentioned, you could damage your body. See my answer to your question about Z06 wheels in Tech/Performance. You can run wider wheels but need reproduction wheels with adjusted offsets.
