It is normal for the sensor not to read correctly for a while after startup because of the excess heat being thrown off by the radiator. To immediately get a correct reading, simultaneously push the first, second and fourth buttons from the right on the climate control panel. It is fairly sensitive to having the buttons pushed at exactly the same time.

If I remember correctly, the outside temp sensor does not immediately give the current temperature and there is about a 10 minute lag. The reason is that when you shut your car down for awhile and it heats up OR cools down, the A/C system would quickily pick up the current temperatures and the A/C system would quickly react to this, making your A/C system over react to the current conditions. It holds the previous settings until the car temperatures settles down and YOU DO NOT LOSE YOUR COOLS, just joking on your cools. This just helps keeps the A/C for better control when you jump in and out of the car on errands. Hopefully, this helps, I think there is something in the manual on this, I know that THICK manual.

2007 owner's manual, pages 181 and 182.

There is also a sensor located behind the front
bumper. This sensor reads the outside air
temperature and helps to maintain the temperature
inside the vehicle. Any cover on the front of the
vehicle could give a false reading in the
temperature.

If the outside temperature goes up, the displayed
temperature will not change until:
• The vehicle’s speed is above 12 mph (19 km/h)
for five minutes.
• The vehicle’s speed is above 32 mph (52 km/h)
for two and a half minutes.

These delays prevent false readings. If the
temperature goes down, the outside temperature
will be shown when you start the vehicle. If it
has been turned off for less than three hours, the
temperature will be recalled from the previous
vehicle operation.

Mine has always been slow to adjust, pushing the three buttons mentioned earlier fixes the problem.
